All the flavors of a mojito are packed into this Strawberry Mojito Sorbet! It’s the perfect sweet, refreshing treat to cool off with this summer!
Happy Friday! Who’s ready for the three day holiday weekend? I know I am and I’m extra excited about the 4th of July this year! This year, instead of hanging around town we’re headed to the mountains. We’ll be spending the 4th in Aspen and assuming the weather allows it, watching fireworks go off over Aspen Mountain! This past fall when we visited Aspen for the first time, we had such a blast that we’ve been talking about going back ever since. We had the pleasure of staying at Hotel Jerome last time and we’ll be staying with them again next week. I absolutely loved our first stay at Hotel Jerome, read more about it here. Everything from the decor, amenities, food and friendly staff really made a great impression on us. This time we’ll be dining at the hotel’s featured restaurant, Prospect. Of course being a food blogger I am beyond excited to eat the amazing food.
Some of the other things we have planned, aside from relaxing, are a couple of hikes, riding the gondola up the mountain and of course eating and drinking everything we can manage to fit into our stomachs. While I’m sure I’ll miss grilling burgers, eating my grandma’s recipe for potato salad and having a couple Bourbon Peach Slushes, I’m sure Aspen will have something delicious to help ease the pain.
Before I head off for another mountain adventure I had to make sure and share the recipe for this Strawberry Mojito Sorbet. This sorbet is going to be a staple in my freezer all summer long! It’s the perfect sweet, fruity and refreshing dessert to cool off with on a hot day. I’ve actually been sneaking bites of it straight out of the container after my runs. Just like a mojito, this sorbet is packed with lime juice, zest, fresh mint and of course a little rum. Not only does the rum add a nice tropical flavor, but it keeps the sorbet from freezing rock solid. The strawberries are the perfect way to add a little berry sweetness to the sorbet, plus they make any dessert a little better! Add this Strawberry Mojito Sorbet to your summer must make dessert list and have a great 4th of July!
Strawberry Mojito Sorbet
Ingredients
- 1 pound strawberries washed, hulled and cut in half
- 1/2 cup granulated sugar
- Zest of a lime
- 3 tablespoons of fresh lime juice approximately 1 1/2 limes
- 3 tablespoons white rum
- 2-3 tablespoons fresh mint leaves use 2 if you want it extra minty
Instructions
- Freeze the canister of your ice cream maker a day before making the sorbet.
- Add all of the ingredients to a blender and blend until smooth.
- Chill the mixture in the refrigerator for an hour or until it is cold.
- Pour the mixture into the ice cream maker canister and process according to the manufacturers instructions.
- Serve immediately if you want a soft serve consistency or freeze for 2-3 hours for a harder and more scoopable consistency.
