These Blueberry Almond Energy Bites are a healthy one bite snack, perfect for eating before or after a workout!
I was finally able to wear shorts on my run on Sunday and it was glorious! After 5 months of being bundled and layered in warm clothes to keep myself from freezing, putting on my shorts again felt so good. It’s always weird wearing shorts again after months of not, you kind of feel a little naked. Of course it’s supposed to be cooler and rainy for the next couple days, so I’ll be back in capris or tights, but my one day of shorts sure did feel good!

- In a small microwave safe bowl add the almond butter and agave and microwave until warm and slightly runny, about 15-30 seconds. Remove from the microwave, add in the almond extract and whisk together until smooth.
- Pour the wet ingredients in with the dry and stir together until combined.
- Add a little water to the bowl you microwaved the almond butter and maple syrup in.
- Use a 2 teaspoon to 1 tablespoon cookie scoop or measuring spoons to scoop out the energy bite mixture. Wet your hands with a little water before forming into balls.
- Place the completed energy bites in an airtight container in a single layer or with parchment paper between each layer. Store them in the refrigerator or freezer.

Why agave nectar? It’s worse than high-fructose corn syrup. I think I’d use pure maple syrup or honey instead for a much healthier bite.
Hi Diane. I chose to use agave because that’s what I had on hand. Feel free to use whatever sweetener you prefer, I’m sure the maple syrup or honey will work great as well.
I love all of your energy bite recipes and these little blueberry almond bites are too good to resist! I could snack on these all afternoon.
Thanks Ashley! I made quick work of the first batch I made, they’re pretty addicting!
I love snacks like these! Oats are such a great ingredient because you’ll be satisfied for so much longer…. I usually bake some oatmeal cookies but they will have to make room for these babies! Pinned :)
Thanks Vivian! I agree that oats especially when combined with protein keep you full for such a long time!
I’m a huge fan of energy bites. Almonds and dried blueberries are some of my favorite snacks, so this recipe is perfect! I’m in a family full of runners so I have to make this recipe for us soon:)
Thanks Maria! Almonds and blueberries are the best together! :-)
