This Grilled Salmon with Strawberry Jalapeño Salsa is sure to become a staple in your weeknight grilling rotation! The hearty salmon paired with the fresh and slightly spicy strawberry salsa is perfect for an easy and healthy dinner!
This past weekend my husband treated me to a celebratory birthday weekend and it was wonderful! The only part that wasn’t ideal was the cloudy, cold, dreary weather that prevented us from going on a hike Saturday morning. Instead of a hike we changed things up and went to one of the biggest and in my opinion best farmers markets in Denver, the Cherry Creek Farmers Market. While the local produce is pretty scarce this early in the year there were plenty of other goodies. Homemade tamales, local honey, kombucha, nut butters, granola, and so many tempting baked goods. We couldn’t resist getting a caramel pecan roll and chocolate chip cookie!
Saturday night we went to one of my favorite areas in Denver, LoHi or the Lower Highlands for dinner. I spent far too much time trying to choose where to eat, I have a list of about 20 different restaurants that I need to go to. I finally landed on a place called Old Major. This restaurant is a must if you are visiting or live in Denver, but haven’t been there. I love that they work with local respected farms to get their meat and have a nose to tail butcher program to make the most of the meat they are using. They refer to their food as contemporary farmhouse cuisine which is spot on. The food isn’t fussy, but the fresh, quality ingredients they use and the simple, but beautiful presentation of the plates is truly amazing. It’s one of those meals where you don’t want to rush through it because you don’t want it to end.
We ordered the charcuterie because we absolutely love it, plus when they butcher and cure their meats in house how could we not?! It was everything I hoped it would be and more! Along with the cured meats, pickled vegetables, cheese, mustards and lardo…say what? Yes, the lardo. It’s what you think it might be, lard. It was whipped into the silkiest texture almost like room temperature butter and flavored with some spices. I never thought I’d say I liked it, but I did. Anyways along with all that we also ordered an asparagus salad topped with mint pesto, baby kale, burrata and bread crumbs and a lamb sausage served with hummus, spiced yogurt and herbs. This meal was a foodies dream come true and I couldn’t have asked for a better birthday dinner!

This is one of my go to weeknight or weekend dinners when I want something fresh, flavorful and fast. There isn’t much to this dish, but the ingredients combined together are bold ones that don’t need a lot done to them to make the meal shine. The salmon is simply seasoned with salt and pepper then grilled until tender and flaky. The salsa is a quick chop and mix of fresh strawberries, lime, red onion, jalapeño and cilantro. The sweetness of the strawberries, spice of the jalapeño and rich flavor of the salmon are a perfect combination. Grilled Salmon with Strawberry Jalapeño Salsa
Ingredients
Grilled Salmon
- 4 salmon fillets
- Kosher salt and black pepper to taste
Strawberry Jalapeño Salsa
- 1 pound fresh strawberries diced
- 1 jalapeño seeded, deveined and finely diced
- 1/2 cup loosely packed cilantro leaves chopped
- 1/3 cup red onion diced
- Juice of a lime
- Kosher salt and black pepper to taste
Instructions
Strawberry Jalapeño Salsa
- In a large bowl combine all of the ingredients for the salsa and stir together until combined.
Grilled Salmon
- Preheat grill to medium high heat.
- Season the salmon fillets with salt and pepper.
- Oil the grill grates or spray them with cooking spray then place the salmon fillets on and grill each side for approximately 3-4 minutes or until desired degree of doneness is reached.
- Top the salmon with the strawberry salsa.
