Strawberry Almond Energy Bites are easy to make and great for a pre or post workout snack. Gluten-free, paleo, vegan and full of strawberry flavor!


I haven’t made a batch of energy bites in a while because I’ve just been buying a couple of RXBARs each week. I usually only eat half of a bar at a time and generally it’s before I go running. I absolutely love these bars because the ingredients are simple and generally the same as what I use when I make energy bites.
However, can we talk about how ridiculous the price of energy bars is?! Even when they’re on sale it still comes out to about $2.00 a bar. I know it’s convenient to just buy them because I haven’t been making my own for months now. But it’s time for me to stop being lazy and make a batch every couple weeks.

To make the Strawberry Almond Energy Bites you’ll need raw cashews, almonds, medjool dates, freeze dried strawberries, vanilla and almond extract. I love using the freeze dried strawberries in this recipe because of how intense the strawberry flavor is and there’s no added sugar, which you’ll often find in regular dried fruit.

Let’s all skip buying expensive energy bar recipes this week and make our own. They take 15 minutes or less to make and they’re so dang good tasting, you’ll forget how good they are for you!

Strawberry Almond Energy Bites

Ingredients
- 1/2 cup raw cashews
- 1/2 cup unsalted almonds
- 7 medjool dates
- 1 cup freeze dried strawberries
- 1/4 teaspoon vanilla extract
- 1/4 teaspoon almond extract
- 1 tablespoon of water, more or less as needed
Instructions
- In a food processor add the cashews and almonds and pulse until they are finely ground.
Add in the remaining ingredients and pulse until everything starts to come together like a dough ball. Scrape down the sides of the bowl as needed. - Form into approximately 20 balls about 2 teaspoons to scant 1 tablespoon each. Store the energy bites in an airtight container in the refrigerator or freezer.

This is amazing however when I made mine, for some reason it didnโt end up doughy and I wasnโt able to fork them into balls. Is it maybe bc I used fresh strawberries or maybe blended too long?
Hi Alla,
I’m sorry you had issues with the energy bites. I haven’t made them with fresh strawberries so that may have been a factor. If your dough was too dry I would recommend adding a tablespoon (more or less as needed) of milk of your choice to the dough. Hope that helps!
I made these according to recipe and OMGoodness! They tasted incredible and everyone who tried one RAVED! I wondered if I could use freeze-dried Strawberry powder?
