Why you’ll love them
Sweet and spicy – Unlike some buffalo chicken recipes, these chicken skewers are a nice balance of spicy and sweet. The spiciness of the buffalo sauce is tamed by the addition of honey.
Avocado ranch – The easy, creamy, and super flavorful homemade avocado ranch sauce is made in a blender and can be used to drizzle on top of the skewers or use it as a dip.
Skewers – Is it just me or are chicken skewers more fun to eat? They’re not only great for dinner, but a fun party appetizer as well.
Versatile – Of course you can just eat these buffalo chicken skewers as is or with one of the sides I’ve listed below. However, try adding them into another meal. They’re great added on top of a lettuce based salad, mixed in with your favorite mac and cheese recipe, or make a buffalo chicken wrap with them.
The ingredients
- Chicken – Chicken breasts or thighs can be used.
- Buffalo sauce – Spicy and tangy. Use mild, medium, or hot depending on how spicy you like your food. I used medium.
- Honey – Honey balances out the spiciness of the buffalo sauce.
- Cumin, smoked paprika, garlic and onion powder – Spice blend for the marinade.
- Avocado – Creamy, rich, and full of healthy fat.
- Greek yogurt – I like to use Greek yogurt in place of sour cream, but either will work for the dressing.
- Mayo – Mayo has a flavor that can’t be replicated. You don’t need much, but it brings this dressing to life!
- Lemon juice – The acid and fresh flavor balance the creaminess and fat in the dressing.
- Cilantro and dill – Herbs give the dressing lots of fresh flavor. If you don’t like cilantro substitute
How to make buffalo chicken skewers
Marinate the chicken – Cut the chicken into approximately 1 1/2 inch pieces. Season them with salt and pepper and add them to a resealable bag. In a bowl combine the buffalo sauce, honey, and dried spices. Whisk together and then pour into the bag with the chicken. Seal the bag and massage the marinade into the chicken. Refrigerate and let the chicken marinate for 1-3 hours.
Assemble skewers and grill – Thread the chicken onto metal or wooden skewers. If using wooden be sure to soak them in water for an hour before threading on the chicken.
Preheat your grill to 425° F. and clean and oil the grates. Place the chicken skewers onto the grill and cook for approximately 6 minutes then flip them over. Grill for another 6-8 minutes or until the internal temperature is 165° F.
How to make avocado ranch dressing
While the chicken is marinating, make the avocado ranch dressing. Add the Greek yogurt, mayo, half of an avocado, lemon juice cilantro, dill, garlic and onion powder, salt and pepper to the blender.
Blend until smooth scraping down the sides of the blender once. You may need to add a little water or milk to the dressing if it’s too thick and won’t blend. Be sure to taste the dressing and add additional salt or lemon juice if needed.
What to serve with buffalo chicken kabobs
When it comes to chicken kabobs, rice is my go-to side. Of course there are tons of other options like roasted potatoes, a salad, grilled corn or other vegetables.
Some of my own recipes that I would recommend serving with them are, strawberry watermelon feta salad, buffalo potatoes, tomato corn pasta salad, maple orange sweet potato salad, or this summer vegetable orzo salad.
Storage and leftovers
The buffalo chicken will keep in an air tight container in the fridge for up to 5 days. The grilled chicken can also be frozen for up to 3 months. Let them defrost in the refrigerator overnight before reheating.
To reheat the chicken skewers simply microwave in 30 second intervals until warmed through.
Buffalo chicken FAQ
Yes. You can use a grill pan or bake them in the oven. If using the oven method, preheat the oven to 450° F. and bake the skewers for about 12-15 minutes or until cooked through. For extra browning, remove them from the oven and set it to broil. Put the chicken under the broiler for 1-2 minutes until browned.
You can use mild, medium, or hot buffalo sauce depending on how spicy you want them. My favorite store bought brand is Noble Made buffalo sauce. Frank’s and Primal Kitchen are other options.
Tips
- If using wooden skewers be sure to prep them ahead of time and soak them in water for an hour. This will keep them from burning up on the grill.
- Baste the chicken skewers as they’re grilling with extra buffalo sauce combined with honey for more flavor.
- Cut the chicken approximately the same size so that the meat cooks evenly.

Buffalo Chicken Skewers
Ingredients

- 1 1/2 pounds boneless skinless chicken breasts
- 1/3 cup buffalo sauce
- 2 tablespoon honey
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and freshly ground black pepper to taste
Avocado Ranch Dressing
- 1/2 of a large avocado peeled and cut into chunks
- 1/2 cup plain Greek yogurt
- 2 tablespoons mayo
- 1 tablespoon fresh lemon juice
- 1/4 cup cilantro roughly chopped
- 1 tablespoon chopped fresh dill
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and freshly ground black pepper to taste
Instructions
- Season the chicken with salt and pepper and add it to a resealable bag. Combine the buffalo sauce, honey, and dried spices to a bowl and whisk them together. Pour marinade in with the chicken, seal the bag, and massage the marinade into the chicken. Refrigerate for 1-3 hours.
- While the chicken is marinating, make the avocado ranch dressing. Add all of the ingredients to the blender and blend until smooth. Scrape down the sides of the blender to ensure everything is well combined. If the dressing is too thick add in a couple tablespoons of water or milk. Taste for seasoning and adjust as needed with more salt or lemon juice.
- Preheat grill to 425° F. Thread the chicken onto metal or soaked wooden skewers. Clean and oil the grill grates then places the skewers on them. Grill for 6-7 minutes then flip them over and grill until the internal temperature is 165° F. If desired, combine extra buffalo sauce and honey and brush the chicken skewers with it during the last minute or two of cooking.
- Remove the skewers from the grill and serve with the avocado ranch dressing.
